What is the best matcha in Quebec?

Best choice depends on use. For plain matcha, choose first harvest ceremonial from a known origin. For lattes, a matcha made for milk does the job. Yuno Matcha crafts first harvest ceremonial matchas in Yame, Japan, including the Grand Cru, gold medalist at the 2023 World Tea Union Awards.

How much matcha and water should I use?

For straight matcha, start with 2 g of sifted matcha and 60 to 80 ml of hot water, no hotter than 80 °C. Whisk in an M motion, then add a little water to taste.

How can I avoid lumps?

Sift the powder before adding water. Then whisk with a chasen using small, quick M-shaped motions. A wide bowl makes this easier.

How should I store my matcha?

Close the container carefully after each use. Keep it dry and away from heat, light and strong odours. Use a dry spoon and follow the date and instructions on the packaging.

Which accessories do I need?

A bowl, a sieve, a measuring spoon and a chasen are enough to start. A scale measures grams more precisely. Kits combine matcha with the accessories listed on their product page: check the contents and selected options.
