Our matcha is hand-cultivated in Yame, according to Japanese traditions. The tea plants are shaded for several weeks before harvest to increase their chlorophyll and L-theanine content. The young leaves are then hand-picked, delicately steamed, dried, and finely ground with stone mills.

We only use first harvest (Ichibancha) matcha, picked in spring. This harvest contains the tenderest leaves, richest in nutrients, making it the best choice for quality matcha.

Unopened, our matcha can be stored for up to 12 months in its airtight packaging, away from light and heat.

Once opened, we recommend consuming it within 3 months to preserve its freshness, aroma, and color.

• Sift 1 to 2 g (about 1 teaspoon) of matcha into a bowl.

• Add 60 to 80 ml of hot water (max. 80°C, never boiling so as not to burn the aromas).

• Whisk with a chasen (bamboo whisk) in an M shape until a fine foam is obtained.

This method brings out all the subtleties of matcha, its sweetness and its umami.
